{Guest Post} Courtney Dial of Pizzazzerie



We are thankful for today’s guest post by none other than the fabulous Courtney Dial of Pizzazzerie. Courtney, thank you for sharing with us and our readers this recipe for your mom’s spectacular Apple Cake.

Thanksgiving is full of family, football, and naps at my house! My mom is an amazing cook and my brother and I love taste testing her recipes each year. One of our favorites (that we request every year) is her Apple Cake. It's so moist and delicious. We usually aim to have it as a dessert but in reality, it's breakfast for us too. It's that good. Enjoy our family recipe this Thanksgiving!

INGREDIENTS
1 1/2 cups vegetable oil
2 cups sugar
3 eggs
3 cups apples, diced (we use Granny Smith)
1 cup all-purpose flour
1 cup pecans, chopped (or walnuts)
3 tablespoons vanilla
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon cinnamon

Beat the oil, sugar, and eggs until well blended. Then, add the flour, vanilla, salt, baking soda, nutmeg, and cinnamon. Finally, add the apples and pecans. Mix until well combined. Bake at 325 degrees for 45 minutes in a 9x13 greased pan.

ICING INGREDIENTS
1/2 cup butter
1 cup brown sugar
1 teaspoon vanilla
1/2 cup milk

Add all icing ingredients to a saucepan. Bring to a rolling boil and then pour over the well-cooled cake.
